Zucchini Breakfast, Lunch or Dinner Skillet (GF, DF, Keto, Paleo)

Enough of the discrimination guys.... eggs are a nutritious food filled with healthy fats, antioxidants and vitamins like choline (particularly important for brain function!)... they deserve to be eaten at ANY meal. They can do more than just breakfast! 

Eggs are interesting. If they work for you, they're an absolute superfood! If they don't, they could be really detrimental. Eggs are a really common sensitivity affecting about 2-3% of the population. For my AI clients, it is the egg whites that often cause the problem due to a difficult protein called lysozyme that can burrow through the gut lining and carry pathogens through the bloodstream (yea... yikes!). So, do be weary if you have any digestive distress or autoimmune symptoms - they may correlate to eggs.

For everyone else, ENJOY THEM! ANY MEAL! ANY WAY! ANY TIME! But please, please, please, if you're still someone eating egg white omelettes, read carefully. Egg whites contain almost nothing but protein, meaning all that HEALTHY fat and the ESSENTIAL vitamins and minerals are IN THE YOLK. Please include it. You're cheating yourself if you don't. Fat does not make you fat, sugar makes you fat. And you're more likely to crave sugar throughout the day if you're not getting enough nutrients because you took them all out of your egg!!!!!

From the keto perspective, which I'm currently playing with, eggs are a fantastic protein choice. Not too too much protein, lots of healthy fats and virtually no carbohydrates. They serve as a great keto snack or, as i said, breakfast, lunch or dinner. 

I had this beautiful skillet for dinner. It felt like a sneaky treat to have eggs at night! Try it out! Live a little!

Zucchini Breakfast, Lunch or Dinner Skillet

SERVES: 3

TIME: 20 minutes

INGREDIENTS

- 1 1/2 tsp coconut oil

- 1 lb extra lean ground turkey

- 2 zucchini 

- 1 cup organic salsa (i like Neal Brothers!)

- 3 free-range eggs

- sea salt & black pepper to taste

DIRECTIONS

1) Add the coconut oil to a large skillet and place over medium ehat

2) Cook the ground turkey, breaking it up as it chokes through. Once it starts to brown, stir in the zucchini. 

3) Continue to sauté until the zucchini has softened (about 3-5 minutes), then add the salsa to the skillet and stir well to mix.

4) Use a spoon to create pockets for the eggs. Crack an egg into each pocket and cover the skillet with a lid. 

5) Let the eggs cook until done to your liking (3-5 minutes), then divide onto plates and season with sea salt & black pepper as you please. 

 

I like to add a little hot sauce when I'm feeling sassy ;) enjoy folks!
