Avocado Salsa - TWO WAYS! (GF, DF, V, Keto & AIP)

Summertime is fleeting here in Toronto. Somehow it always feels like the shortest season and that we never have enough time to truly make the most of it. 

This summer has definitely been an incredible one for me. Having just got married last month there has been plenty of celebrating! There was also, before the wedding, a fair amount of stress associated with coordinating & planning, etc. Now that it's over I'm worried the summer is slipping away! 

I'm doing everything I can to hold on to that feeling of summer. I'll be heading up to my cottage this weekend, I'm doing plenty of walking & biking and we are hoping to enjoy a little bit of what's left of patio season too! My absolute favourite way to savour the summer, however, is by making every meal as summery as possible! 

For me, that means lots of avocado, fresh fruits, crisp greens and the like!

Avocado salsa is sort of the culmination of all of those things and the best part about it is that you can throw it on any meal to amp up the summer flavour, use it a dip for some tortilla chips or even just eat it with a spoon! Yes... I do that. 

Not only is avocado salsa versatile in that there are so many applications for it but it's versatile in that you can make it so many different ways!

Here are my top two avocado salsa combos! Just swapping one ingredient makes a whole world of flavourful difference. 

If you use the mango, it's AIP friendly! If you use the avocado, its Keto friendly!

Avocado Salsa - Two Ways!

INGREDIENTS

1 large avocado

1 cup mango OR cherry tomatoes (this is the big swap! - both work amazingly!)

2 tbsp cilantro

1 lime

1 pinch sea salt

1 pinch red pepper flakes (optional)

DIRECTIONS

1) Dice the avocado & mango OR cherry tomatoes & combine in a bowl

2) Chop cilantro and add to bowl to combine

3) Juice the lime and add to the salsa with the remaining seasonings

4) Toss to combine and use as you please!
