Apple & Butternut Breakfast Hash (AIP, GF, DF)

Sooo one of the big adjustments we need to make on the AIP diet is NO EGGS!

Yes, i do consider eggs a health food IF you are not sensitive to them! Unfortunately, many of us are sensitive and don't even know it!

WARNING! BORING SCIENCE AHEAD! (feel free to skip if ur not into it)

We eliminate them on the AIP diet because not only are they a common sensitivity but the protein in egg whites called lysozyme has a pretty powerful ability to burrow through the gut lining, into the bloodstream, where it can act like a carrier for pathogens and bacteria! obviously, that's not ideal for someone dealing with an overactive immune system. SO to give our bodies a chance to clear this protein from our systems and heal up that gut lining, we take a break from eggs.


Ok… done with nerdiness now!

Some of us can reintro eggs and have no problem at all! Some of us, will notice symptoms right away. EVERYONE IS DIFFERENT! That's why the AIP diet is not elimination forever but requires a personalized reintroduction process to see what YOUR triggers are!


SO for now, I'm avoiding eggs. This means I have to start thinking outside the box for breakfast, especially when there is also no grain or dairy allowed.

Apple & Butternut Breakfast Hash


SERVES: 4

TIME: 30 minutes

INGREDIENTS

1 lbs grass-fed ground beef

2 tsp cinnamon

1 tbsp oregano

1 cup red onion (diced)

2 garlic cloves (minced)

2 cups brussels sprouts (trimmed & halved)

1 butternut squash (peeled & cubed)

2 apple (cored & diced) - i like gala best but it’s totally up to you!

Sea salt (to taste)

DIRECTIONS

1) Heat a large skillet over medium heat. Add the ground beef, cinnamon & oregano. Cook for 5-7 minutes. When cooked through, transfer beef to a bowl and set aside.

2) In the same skillet, add the onion and garlic, sautéing until translucent. Then add the brussels sprouts, butternut squash and apples. Cover and cook for approximately 10 minutes, stirring occasionally, until all veggies are soft.

3) Add the ground beef back into the skillet and stir to combine. Season to taste with sea salt and maybe a little cinnamon & oregano if you’re feelin’ it. Divide into bowls & enjoy!

Who needs eggs anyway! ;) Eat up!
