Beef, Broccoli & Sweet Potato Skillet (AIP, Paleo, GF, DF)

BROCCOLI? goood

SWEET POTATO? goood

BEEF? GOOOOOOD.


For those of you who don't know I'm a huge F.R.I.E.N.D.S fan and so all of the above is meant to be read a la Joey Tribiani as he refers to the ingredients in Rachel's messed up english triffle.


For those of you know know what i'm talking about and now hear it, we are instantly best friends now.


For those of you who have no idea what i'm talking about and just want me to get to the recipe, we can still be besties... come over and i'll make you this dish while i force you to watch friends with me.


Ok, so here are the deets!


This dish is AIP, Paleo, Gluten-Free and Dairy-Free, as most of my recipes are.


It contains 7 super simple ingredients and is whipped up in one skillet in UNDER 30 minutes.


It’s delicious, easy and fun for the whole fam!


BONUS: It keeps well and makes great leftovers!

Beef, Broccoli & Sweet Potato Skillet

(AIP, PALEO, GF, DF)

TIME: 25 minutes

SERVES: 4

INGREDIENTS

1 lb grass-fed ground beef

1 yellow onion (sliced)

1 tbsp fresh ginger (peeled & grated)

2 garlic cloves (minced)

2 sweet potato (grated)

4 cups broccoli (chopped into florets)

1/2 tsp sea salt (or to taste)

DIRECTIONS

1) Heat a larger skillet over medium heat and add the beef, onion, ginger, garlic & sweet potato.

2) Toss, cover & cook for 10-15 minutes, stirring occasionally until beef is cooked through and sweet pots soften.

3) Add the broccoli and cook for about 5 more minutes, or until bright green and softened.

4) Divide into bowls, season with salt and mow down!
