Creamy Garlic Spaghetti Squash Casserole (AIP, GAPS, Paleo, GF, DF)

Any excuse to use our Le Creuset casserole dish that we got off our registry! 


I also just love casserole recipes for the fact that you can just throw a bunch of stuff in the dish, slide it in the oven and call it dinner for days!


This is the perfect dish if you've been hankering for pasta but you're following a therapeutic protocol like AIP or GAPS or if you're just good ol' gluten-free or paleo! This dish is also dairy-free -- the creamy flavour comes from coconut milk!


It’s really just a much healthier alternative.



Get this going for tonight's family dinner!


Creamy Garlic Spaghetti Squash Casserole

(AIP, GAPS, PALEO, GF, DF)

TIME: 1 hour

SERVES: 4 servings

INGREDIENTS

1 spaghetti squash

12 oz ground chicken, turkey or pork

1 tsp dried oregano

1/2 tsp garlic powder

1/2 tsp onion powder

2 garlic cloves (minced)

1 tbsp coconut flour (or tapioca flour if not GAPS)

1 2/3 cups coconut milk (canned)

4 cups broccoli (chopped into florets)

sea salt (to taste)

DIRECTIONS

1) Preheat the oven to 425 degrees F.

2) Cut the spaghetti squash in half lengthwise. Remove the seeds and place flesh-side down on a parchment paper lined baking sheet. Cook for 30-35 minutes, until cooked through.

3) While the squash is cooking, cook the ground chicken, turkey or pork over medium heat on a pan. Add oregano, garlic powder & onion powder and mix in well. Break up the meat with a wooden spoon until crumbled and cooked through (about 6-8 minutes). Remove from heat and set aside.

4) In the same pan you used to cook the meat, add the garlic and saute for 1 minute, then add coconut flour (or tapioca). Lower the heat to medium-low and add the coconut milk. Whisk until the coconut flour is dissolved and mixed in. Let it simmer until it thickens into a sauce.

5) Remove squash from the oven and use a fork to scrape out the noodles and add them to the bottom of your casserole dish.

6) Top the squash with your ground meat, broccoli and sauce. Season with sea salt and bake for 15-20 minutes, or until broccoli is cooked through.

7) Remove the casserole from he oven and divide onto plates. Watch everyone smile as they eat up!
