Paleo Banana Mini Muffins

I work with many clients looking to get on AIP to heal their guts and find remission from their autoimmune disease who are coming from a SAD (Standard American Diet) and feeling totally overwhelmed by the whole idea.


My approach? Take it slow and make it fun!


If we go from 0 - 100 it will be stressful and feel like deprivation - and that stress will get in the way of really healing.


First we work on going gluten-free, then dairy-free, then paleo, then we get into the next-level AIP stuff like nuts, seeds & nightshades.


While we do that I throw in all the tasty treats that feel like the comfort foods they're used to, while working on shifting the relationship to food so that, in the end, you won't crave or need these things but they can just be fun indulgences, totally within their control.


These paleo banana mini muffins are a great step along the way.


They are gluten-free, dairy-free, and paleo!


They're a perfect snack or even a breakfast - yea, when muffins are this loaded with nutrition, they actually can be a suitable breakfast!


No matter who you are or what food philosphy you follow, these are damn delicious and easy to make... so why not? 

Paleo Banana Mini Muffins

(PALEO, GF, DF)

TIME: 40 minutes

SERVES: 24 mini muffins

INGREDIENTS

3 bananas

6 eggs

1/2 cup coconut oil (melted)

1/2 cup raw honey

1 tbsp vanilla extract

3/4 cup coconut flour

1/2 tsp sea salt

1/2 tsp baking soda

1 tsp cinnamon

DIRECTIONS

1) Preheat oven to 350 degrees.

2) Mix banana, eggs, coconut oil, honey & vanilla in a large mixing bowl.

3) Combine coconut flour, salt, baking soda & cinnamon in a small mixing bowl.

4) Add the dry ingredients into the wet ingredients and mix until combined and there are no lumps.

5) Divide the batter into your mini muffin tin 1 spoonful at a time.

6) Bake for 15-25 minutes until the tops are just golden!

7) Remove, let cool and snack-on!
