Turmeric Walnut Chicken Nuggets (GAPS, Anti-SIBO, Paleo, GF, DF)

I am always working to bring you healified versions of your favourite comfort foods. This chicken nuggets recipes uses walnuts instead of breadcrumbs to make the crunchy nugget batter. This instantly makes them more nutritious and adds some anti-inflammatory power.
On top of that, this recipe works some turmeric into that breading to make them even MORE anti-inflammatory, and may even help to improve thyroid health... but trust me, your kids won't even notice it's there!
I recommend pairing them with my parsnip fries or spicy rutabaga fries and calling it takeout!
Turmeric Walnut Chicken Nuggets
TIME: 30 minutes
SERVINGS: 4
INGREDIENTS
1 cup walnuts
2 tbsp turmeric
1/4 tsp sea salt
1/4 tsp black pepper
1 lb chicken breast
2 tbsp avocado oil
DIRECTIONS
1) In a food processor, blend the walnuts, turmeric, sea salt & black pepper until a flour-like consistency forms.
2) In a separate bowl, toss the cubed chicken breast in half of the avocado oil until evenly distributed. Pour the walnut mixture over the chicken and toss until the chicken is coated.
3) Warm a skillet over medium heat and add the remaining oil. Add the breaded chicken to the pan and cook for 10 minutes per side. For the final 2 minutes, add a lid and cook until the chicken reaches an internal temperature of 165 degrees F.
4) Serve the chicken nuggets with your favourite dipping sauce and enjoy!
Who needs McDonalds anyway, amiright? ;)
