Sweet Potato Tuna Burgers (Paleo, Gluten-Free, Dairy-Free, Pescatarian)

These burgers are the perfect choice for batch cooking and keeping everyone happy!


I originally created the recipe when i was having over some friends for dinner. ⁠

I'm celiac & paleo is best for me⁠.

One of the friends coming over was lactose intolerant⁠.

One of the friends coming over was pescatarian (no meat except fish!)⁠

So, i needed a delicious & nutritious recipe that was 100% paleo, gluten-free, dairy-free AND pescatarian... which can be a bit of a challenge!

But I did these suckers up with some parsnip fries and it was a hit! ⁠

Now I make them all the time to get in some healthy omega-3's, important minerals like selenium, iodine & zinc from the fish and sneak some hearty veggies straight into the patty! ⁠

Sweet potato has a ton of beta-carotene, an important antioxidant & the precursor to vitamin A, which is integral for gut-healing. ⁠

Sweet Potato Tuna Burgers

Sweet Potato Tuna Burgers (Paleo, Gluten-Free, Dairy-Free, Pescatarian)

TIME: 45 minutes

SERVES: 4 servings

INGREDIENTS

1 sweet potato

2 cans tuna (drained & flaked) - I only use SafeCatch because they test their fish for mercury before use.

1/3 cup almond flour

3 stalks green onion (chopped) - I use Bob’s Red Mill

1 egg

1/2 tsp oregano

1/2 tsp sea salt

1/2 tsp black pepper

DIRECTIONS

⁠1) Peel sweet potato and chop into 1/2 inch slices.

2) Fill a pot with water and bring to a boil. Place sweet potato in steaming basket and steam for 7-10 minutes.

3) When finished steaming, transfer sweet potato to a bowl and mash with a fork. Measure out 1 cup mashed sweet potato and set aside.

4) Preheat oven to 425 degrees F (218 C) and line a baking sheet with parchment paper.

5) Combine tuna, mashed sweet potato, almond flour, green onion, egg, oregano, paprika, sea salt, and black pepper together in a bowl. Mix well.

6) Use your hands to form mixture into even patties. Drop the burgers onto the baking sheet & place in the oven for 15 minutes. Then flip and let cook for another 15 minutes.

7) Serve with a side of homemade parsnip fries or spicy rutabaga fries for a not so classic take on a classic family meal!
