Pumpkin Soup for the Soul (AIP, GAPS, GF, DF)
I think my favourite thing about pumpkin season is that it’s also soup season!
Soups are the easiest thing to batch cook.
In the fall & winter, I will make two different soups during my Sunday batch cook and rotate between the two for lunch throughout the week.
This week though… it’s all pumpkin all day!
Grab this satisfying AIP pumpkin soup recipe to fuel yourself through the fall!
AIP Pumpkin Soup
TIME: 20 minutes
SERVES: 4
INGREDIENTS:
1 tbsp coconut oil
2 1/4 cups pureed pumpking
2 cups vegetable or bone broth
1/2 cup coconut milk (canned)
1 tsp ground ginger
1 tsp ground sage
1 1/2 tsp maple syrup
1/2 tsp sea salt
DIRECTIONS:
1) In a large pot, heat coconut oil over medium heat. Stir in pumpkin, broth, coconut milk, ginger sage, maple syrup & sea salt.
2) Bring to a boil and let simmer for about 10 minutes. Divide and enjoy!
