No, i'm not just gonna tell you to buy a dip for your veggies... we've all thought of that and it only works for like a week and a half and then we go back to not eating veggies anymore.
No, instead, I suggest that your dip BE your veggies.
This dip, my dear friends, is nearly 100% veggie.
You can dip whatever you want in this bad boy, like siete chips, mary’s crackers or apple slices, you name it! Bonus points if you start dipping veggies into veggies! I love this dip with cucumber.
The recipe is AIP, GAPS, Paleo, Vegan, Gluten-Free & Dairy-Free so whip it up for your whole fam or bring it to your next potluck! EVERYONE can enjoy it!
Butternut Veggie Dip
(AIP, GAPS, PALEO, GF, DF)
TIME: 20 minutes
SERVES: 12
INGREDIENTS
1 butternut squash (peed & diced into cubes)
1/4 cup lemon juice
1 tsp sea salt
1/2 cup extra virgin olive oil
DIRECTIONS
1) Steam butternut squash cubes in a steaming basket for 6-8 minutes, until tender when pierced with a fork.
2) Add steamed squash, lemon juice, sea salt & olive oil to a blender or food processor and process until smooth.
3) Transfer to a bowl and refrigerate until ready to eat! It’ll keep for about 5-6 days.
