Fudge Friday: Try My Carob Coconut Fudge! (AIP, GAPS, V, GF, DF)
I remember taking trips to Niagara with my grandparents when I was young and loading up on fudge from this incredible factory they had there. It was like pure sugar and happiness melting in my mouth.
I don’t know why my grandparents kept bringing us there because EVERY time without fail, we would be bouncing off the walls! Bringing us to the wax museum after that was a risky move - whose to say we wouldn’t rip Michael Jackson’s wax arm off?!
Anyways, my point is, I love fudge and the taste of it in my mouth brings me back to childhood happiness and memories with loved ones.
It had been a while since I had fudge but I actually recently got married in Niagara-on-the-Lake and so on one of my trips down with a bridesmaid, we stopped at that same fudge shop. She got a block of it and I had to grab some too. I told myself I’d bring it home to my hubby-to-be but it did not survive the trip.
I realized I had been missing out on magic and although the sugar rush, sugar crash and enormous tummy ache wasn’t QUITE worth it, I decided I needed to find a way to make fudge work for me!!
That is my mission in life, it seems: turn unhealthy favourites into healthy & delicious masterpieces! #realisticholistic ;)
Anyways, after a few tries, I finally figured it out. This recipe is so good that my hubby still eats it even though I make it with carob.
I make it with carob because right now I am on the AIP elimination protocol for managing autoimmune conditions with diet, (if you wanna learn more about that hit me up for a phone call) and one of the things that we eliminate is seeds. Did you know that cacao is technically a seed? Yep, that means no chocolate. Luckily, carob is ALMOST as good. You can totally make this fudge recipe with cacao if you don’t have any issues with it… it’ll probably taste even better!
Using the carob, this recipe is compliant to many restrictive nutrition protocols including AIP, GAPS, Paleo, Gluten-Free, Dairy-Free, and if you switch the sweetener to stevia or xylitol you could go the Keto route if you want too!
With only 6 simple ingredients, it is incredibly easy to whip together in under 15 minutes and serve the whole family this sweet treat for days! I recommend pairing it with a baby bowl of frozen fruit for a super satisfying (but healthy!) dessert!
So, without further delay, I am proud to present….
Carob Coconut Fudge
(AIP, GAPS, V, GF, DF)
TIME: 15 minutes
SERVES: 20 big pieces or 30-40 little ones!
INGREDIENTS
1 1/2 cups coconut oil
1 1/2 tbsp carob powder (or cacao if not AIP/GAPS)
1 cup coconut milk
1/2 cup maple syrup
1 1/3 tbsps vanilla extract
1 pinch sea salt
DIRECTIONS
1) Melt coconut oil in a saucepan on the stovetop
2) Once the coconut oil is melted, add all other ingredients and whisk gently to combine.
3) Use an immersion blender or transfer contents to a standing blender and mix until thick and creamy. If it becomes a bit too thick, just throw it back on the stove for a bit until it becomes more liquid again.
4) Line a glass baking dish with parchment paper and pour fudge in, spreading evenly.
5) Transfer to the fridge or freezer to cool and set.
6) Once fudge is solid, cut into whatever size you desire and eat your heart out! Keep stored in your freezer for best results!
