I'm starting of the season with a treat that I can't help but to include all year round… Peppermint Chocolate Truffles 🀀 You can find the recipe below, but while I have you thinking holiday goodies, here is a quick list of some of my other festive recipes to enjoy:

Peppermint Chocolate Truffles

Paleo Christmas Dessert (Gluten-free, Dairy-free)

(PALEO, GF, DF, V)

TIME: 20 minutes

SERVINGS: 10

INGREDIENTS

1 cup pitted dates (packed)

3 cups very hot water (ideally, boil it just before use)

1/3 cup cocoa powder

1/2 tsp peppermint extract

3 tbsp coconut oil

1/3 cup dark chocolate chips (I highly recommend Enjoy Life!)

1/4 tsp sea salt (large flakes, for topping!)

DIRECTIONS

1) Add the dates to a medium bowl and cover with very hot water. Let sit for 8-10 minutes until dates have softened.

2) Drain your dates and add to blender or food processor along with cocoa powder, peppermint extract & coconut oil. Process until well incorporated.

3) Remove the mixture and scoop teaspoon-sized balls. You won’t be able to roll them with your hands just yet because they’ll be too oily. So, simply place them on a parchment-lined baking sheet and put them in the freezer for 8-10 minutes until they set.

4) Meanwhile, place your chocolate chips in a double boiler and stir until melted and smooth.

5) Once truffles have set, remove them from the freezer and use your hands to smooth them into balls.

6) Take each ball and roll into melted chocolate with a spoon, then place them back on the baking sheet.

7) Top each ball with a touch of flaky sea salt and place the sheet in the fridge for at least 3-5 minutes until they set. ENJOY!
