The Grinch Who Stole my Chia Pudding! (Paleo, GF, DF, V)
I always try to make it a mission to get at LEAST 5 servings of vegetables in each day.
When I break that down, that means:
✔️ 1 at breakfast OR for a snack
✔️ 2 at lunch
✔️ 2 at dinner
2 at lunch and 2 at dinner is never a problem for me, but sometimes getting veggies at breakfast is hard! Unless your having eggs every morning, the other breakfast go-to's don't always seem like they lend themselves well to added veggies... oatmeal? baked goods?... chia pudding!?!
I actually find ways to add veggies to ALL of those breakfast go-to's!
This week, I made a big batch of what I am calling my Grinch's Green Pudding!
It is a classic chia pudding but instead of JUST almond milk, I have set it with a well-rounded green smoothie so that I can a full cup of spinach per serving!
I love topping it with frozen pomegranate seeds to give the green it's holiday red companion and calling it a Christmas treat!
This breakfast is high in healthy fats, protein (I add collagen powder!), magnesium, calcium, vitamin C, folate and potassium!!! Just what a momma and her growing baby need! 😘
WARNING: Those who consume may experience the sensation of their heart growing three sizes that day! 😜
The Grinch’s Green Pudding
(PALEO, GF, DF, V)
TIME: 15 minutes (+ overnight)
SERVINGS: 4
INGREDIENTS
4 cups unsweetened almond milk
4 cups baby spinach
2 tbsp maple syrup
1/4 cup collagen powder
3/4 cup chia seeds
1 cup pomegranate seeds
DIRECTIONS
1) Blend the maple syrup, almond milk, spinach and collagen powder in a blender until smooth
2) In a large bowl or jar, add the blended liquid and the chia seeds. Whisk if you are using a bowl or cover the jar with a lid and shake vigorously.
3) Place in the fridge to set overnight and then enjoy in the morning topped with fresh or frozen pomegranate seeds!
