Spicy Tuna Avocado Boats (GF, DF, Paleo, GAPS)

What’s for lunch when you have celiac disease but you really want a tuna salad sandwich?

Well, to start I make a delicious, spicy tuna salad that I have always loved.

I use Safe Catch wild-caught tuna, which tests all their fish for heavy metals before use!

Then, I throw that tuna salad into an avocado, because avocados are more delicious, more nutritious and less expensive than gluten-free bread.

Then, I just surround it with bitter leafy greens like arugula that help to improve digestion by stimulating the bitter receptors throughout your entire digestive tract.

Finally, I top it off with cleansing herbs like cilantro to simulate the liver and keep inflammation low!

Win, win, win, win!

Spicy Tuna Avocado Boats

TIME: 5 minutes

SERVES: 2

INGREDIENTS

1 can Safe Catch Tuna

2 tbsp Chosen Foods Avocado Oil Mayonnaise

1-2 tbsp Frank’s Red Hot Sauce

1/4 tsp Sea Salt

1/4 tsp Black Pepper

2 Avocados

2 cups Arugula

2 tbsp Cilantro, chopped

DIRECTIONS

1) In a small bowl, mix tuna, mayo, hot sauce, sea salt & pepper

2) Half the avocados and scoop a little bit out of the middle of each… definitely eat it, don’t toss it.

3) Divide the tuna salad evenly amongst the avocado boats

4) Place on top of a bed of arugula

5) Garnish with cilantro & enjoy!
